عنوان فارسی مروری بر چالش‌ها و ظرفیت‌های استفاده از پسماندهای کشاورزی و صنایع تبدیلی در تولید محصولات عملکردی، زیست فعال و ارزش ‌افزوده
چکیده فارسی مقاله با افزایش جمعیت جهان و رشد روزافزون تقاضا برای غذاهای سالم و عملکردی، پسماندهای کشاورزی و صنایع تبدیلی حاصل از فرآیندهای برداشت و فرآوری، در صورت مدیریت و فرآوری کنترل ‌شده، به‌عنوان منابع بالقوه مواد مغذی و ترکیبات زیست ‌فعال اهمیت ویژه‌ای یافته‌اند. این مقاله مروری، مطالعات منتشر شده بین سال‌های ۲۰20 تا ۲۰۲5 را با هدف بررسی مهم‌ترین ترکیبات موجود در پسماندها، فناوری‌های نوین در صنعت فرآوری مواد غذایی، نمونه‌های موفق صنعتی در ایران و جهان و هم‌چنین چالش‌ها و فرصت‌های بهره‌برداری ایمن، غیرمستقیم و مبتنی بر استانداردهای بهداشتی از این منابع، تجزیه و تحلیل کرده است. یافته‌ها نشان دادند که پسماندهای میوه‌ها، سبزیجات، غلات و صنایع تبدیلی حاوی مقادیر قابل توجهی پلی‌فنول‌ها، فلاونوئیدها، کاروتنوئیدها، فیبرهای رژیمی، پروتئین‌ها و اسیدهای چرب ضروری هستند که پس از انجام فرآیندهای پالایش، ضدعفونی و کنترل کیفی، می‌توانند به‌عنوان افزودنی‌های مجاز غذایی، مواد اولیه تولید مکمل‌ها، خوراک دام فرآوری ‌شده و بسته‌بندی‌های زیست ‌تخریب‌پذیر مورد استفاده قرار گیرند. استفاده از فناوری‌های نوین، روش‌های استخراج سبز، مایکروویو، فراصوت، سیالات فوق بحرانی و تخمیر میکروبی فرصت‌های موثری برای افزایش بازده، پایداری و کیفیت ترکیبات بازیافتی فراهم می‌آورند. با این حال، چالش‌هایی مانند هزینه‌های بالای تجهیزات، عدم زیرساخت مناسب، پذیرش محدود مصرف‌کننده و نبود چارچوب‌های قانونی جامع هنوز مانع توسعه صنعتی به شکل گسترده هستند. مطالعه مروری حاضر نشان می‌دهد که مدیریت پسماندها در چارچوب اقتصاد چرخشی، همراه با سیاست‌های حمایتی و آموزش مصرف‌کنندگان، می‌تواند علاوه بر ارزش اقتصادی، منافع زیست ‌محیطی و اجتماعی قابل توجهی ایجاد کند. نتایج این مطالعه می‌تواند برای پژوهشگران، تولیدکنندگان و سیاست‌گذاران به‌عنوان مرجعی راهبردی در توسعه پایدار و تجاری‌سازی محصولات حاصل از پسماندهای کشاورزی مورد استفاده قرار گیرد.

عنوان انگلیسی Review of Challenges and Capacities of Utilizing Agricultural and Agro-Industrial By-Products for the Production of Functional, Bioactive and Value-Added Products
چکیده انگلیسی مقاله With the growth of the global population and the increasing demand for healthy and functional foods, agricultural and agro-industrial wastes generated during harvesting and processing have gained significant attention as potential sources of nutrients and bioactive compounds when managed and processed in a controlled manner. This review article analyzes studies published between 2020 and 2025 with the aim of examining the most important compounds present in these wastes, emerging technologies in the food processing industry, successful industrial applications in Iran and worldwide, as well as the challenges and opportunities associated with the safe, indirect, and standards-based utilization of these resources. The findings indicate that wastes from fruits, vegetables, cereals, and agro-industrial processes contain substantial amounts of polyphenols, flavonoids, carotenoids, dietary fibers, proteins, and essential fatty acids, which, following refining, decontamination, and quality control processes, these compounds can be utilized as approved food additives, raw materials for dietary supplement production, components of processed animal feed, and biodegradable packaging materials.The application of emerging technologies, including green extraction methods, microwave- and ultrasound-assisted extraction, supercritical fluid technologies, and microbial fermentation, provides effective opportunities to enhance the yield, stability, and quality of recovered compounds. Nevertheless, challenges such as high equipment costs, inadequate infrastructure, limited consumer acceptance, and the lack of comprehensive regulatory frameworks continue to hinder large-scale industrial development. This review demonstrates that waste management within a circular economy framework, supported by appropriate policies and consumer education, can generate considerable economic value as well as environmental and social benefits. The findings of this study may serve as a strategic reference for researchers, producers, and policymakers in advancing sustainable development and the commercialization of products derived from agricultural wastes.
